At the top of almost every list are dark leafy greens. Packed with nutrients and minerals and boasting a low GI, kale, spinach, collards and Swiss chard are beneficial for those living with diabetes. Sweet potatoes, corn, carrots and legumes also have low GI rankings. The best fruits include apples, oranges, grapefruits and lemons.
