1. In a large bowl, combine the pineapple, tomatoes, red onion, cilantro, and jalapeno pepper gently with a rubber spatula.
2. In a small mixing bowl, whisk the olive oil, lime juice, cumin, salt, and minced garlic together with a fork until well-combined.
3. Pour the olive oil and lime juice mixture evenly over the pineapple-tomato mixture and fold in gently with the rubber spatula until the olive oil and lime mixture is evenly distributed. Cover and refrigerate until ready to serve.
