Raspberry Yogurt Mousse Recipe
3 tablespoons fresh lemon juice
½ teaspoon powdered gelatin
5 cups raspberries
1 cup heavy cream
1 cup plain yogurt
Chopped nuts for garnish (optional)
1. Add lemon juice to a small bowl and sprinkle with the powdered gelatin, allowing the gelatin to soften for about three minutes.
2. In a blender, puree 2 cups of raspberries until smooth. Strain through a fine-mesh strainer, pressing on the berries to extract the highest amount of juice. Discard the berry solids.
3. In a small saucepan, cook the raspberry juice over medium until it just begins to simmer. Add the lemon juice/gelatin mixture and cook until the gelatin dissolves, stirring constantly. Transfer to a bowl to allow to cool to room temperature.
4. In a medium mixing bowl, beat the whipping cream on medium-high speed until firm peaks form. Gently fold the plain yogurt into the whipped cream with a rubber spatula. Next, fold in the raspberry puree mixture.
5. Evenly divide the mixture into 12 silicone molds and refrigerate until set, at least two hours.
6. To serve, unmold the mousses and place on a plate. Surround each mousse with fresh raspberries. If desired, sprinkle the raspberries with chopped nuts to provide the dessert with a little crunch.
