Ingredients

  • 4 lbs of cucumbers

Brine:

  • 5 cups of water
  • 2 cups of vinegar (5%)
  • 1 tbs of salt

Spices:

  • 1 medium horseradish root, cut into about 0.5 x 5-inch sticks (3 sticks per jar)
  • 1 bunch of dill – 3 twigs (per jar)
  • 3-4 bay leaves (per jar)
  • 10 peppercorns, whole (per jar)
  • 6 allspice, whole (per jar)
  • 2-3 garlic cloves (per jar)
  • 1 tsp of mustard seed (per jar)

Additionally:

  • 5 1-quart jar
  • Large pot for disinfecting and pickling jars

Directions

• Place jars and covers in pickling pot, fill with water enough to cover jars and bring to boil.
• Carefully take out jars and cool.
• In a medium pot, combine brine ingredients and heat through.
• Wash cucumbers and dill.
• Peel garlic and horseradish root.
• Cut horseradish into sticks.
• Place cucumbers and all spices in each jar.
• Pour brine into each jar and place covers on each jar.
• Place jars back into hot water and bring to boil.
• Boil on low for 4 minutes from the time the water starts bubbling.
• Take jars out and cool.
• This recipe can be enjoyed with rice, potatoes, chicken and a wide variety of meats or fish of your choice.
• It is best to be consumed chilled or at room temperature.
